So simple and delicious! These can be made ahead and refrigerated until ready to bake.
Preheat oven to 350 degrees. Combine cream cheese, Pepper jack cheese and taco seasoning. Mix in shredded chicken. Divide mix into centers of tortillas (approximately 2 1/2 heaping tablespoons). Roll each tortilla and tuck in sides. Spray a large baking dish or cookie sheet with cooking spray. Lay chimichangas seam side down in dish. Spray tops with cooking spray. Bake for 15 minutes. Turn over and bake an additional 15 minutes. Remove from oven and garnish with your favorite Mexican toppings.
